  • 5 Eggs
  • 1 can sweetened condensed milk
  • 1 can evaporated milk
  • 1 tsp vanilla extract
  • A pinch of salt
  • 1 cup water
  • 1 cup granulated sugar

PROCESS

This recipe works best if you have a proper baño de maria pot, but it can be done without it.

  • First, caramelize your sugar by putting it into the baño de maria base and heating and stirring gradually (a regular pot will do as well)
  • While the sugar is heating, in a large bowl mix all other ingredients thoroughly (you don’t want to see any egg chunks because you’ll taste that when the flan is cooked)
  • Once sugar is melted and golden, pour the mixture on top of the sugar. (if using a pot, you may transfer sugar to a disposable aluminum tray that’s around 7x9in, and then pour the mixture on top)
  • Place the baño de maria base on top of its pot filled halfway with water. Cover and cook on the stove for about 45 mins, then check with a toothpick or cake needle to ensure no flan comes off on the tester. (if using the aluminum, you’ll need a larger tray halfway filled with water to put the flan on top of so it steams. You’ll cook it in the oven at 350F for 45 mins)
